Butternut Squash Soup
1 butternut squash pealed and chopped
1 medium onion pealed quartered
2 cup chicken stock
2 tbsp olive oil
salt & pepper to taste
Peal and chop the butternut squash, place on a cookie sheet.
Peal and chop the onion and place on the cookie sheet.
Drizzle with the olive oil and salt & pepper.
Bake at 375 degrees for 45 minutes.
Heat chicken stock.
Place butternut squash and onion in blender, with chicken stock, blend.
