Butterscotch Butter Pecan Cookies
1 c. brown sugar
1 c. sugar
½ c. butter softened
½ c. butter flavored shortening
2 c. rolled oats
1 t. vanilla
2 c. flour
1 t. salt
1 t. baking soda
1 t. baking powder
½ cup chopped pecans
1-11 oz. package butterscotch morsels
Pre-Heat oven to 350 Degrees Fahrenheit.
Cream together sugars, butter and shortening.
Add eggs, vanilla and oats.
In a separate bowl, combine flour, salt, baking soda and baking powder. Add to oats mixture 1/3 at a time and stir well.
Add pecans and butterscotch morsels to cookie dough and stir well.
Form into balls and bake on cookie sheet for 10 – 12 minutes or until cookies are golden brown.
Makes 3 dozen.
