Butterscotch Crisp Oatmeal Cookies
2/3 cup softened butter
1 cup packed brown sugar
1 1/2 cups rolled oats (not instant)
1 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

1 tbsp. vanilla 1 cup rice crispies
1/2 cup oats
1/2 cup butterscotch
In a large bowl beat butter with sugar until fluffy.
Beat in the egg.
Add your choice of ingredients from step #1.
In a separate bowl mix oats, flour, baking powder, baking soda and salt.
Stir into butter mixture along with add ins in step #2 until well blended.
Drop by heaping tbsp. about 2” apart onto a greased baking sheet.
Bake in top and bottom thirds of a 375 degree oven for 10 minutes or until golden.
Let cool on pan for about 2 minutes and then transfer to a rack to cool completely.
