Butterscotch-Oatmeal Cookies

Serves 2 1/2 Dozen | Prep Time About 15 minutes | Cook Time 15 minutes

Ingredients

3/4 cup sifted flour
3/4 tsp baking soda
1/8 tsp salt
1/4 tsp ground cinnamon
1/2 cup shortening
1/2 cup brown sugar, packed
1/2 cup sugar
1 egg
1 cup quick-cooking oats


Sift together the flour, baking soda, salt, and cinnamon


Set aside


Cream together the shortening, brown sugar, and sugar in a bowl until light and fluffy, using an electric mixer at medium speed


Add the egg


Beat well


Gradually stir the dry ingredients into the creamed mixture


Blend well


Stir in the oats


Drop the mixture by rounded teaspoonfuls, about 3 inches apart, onto greased baking sheets


Bake in a 325 F oven for 15 minutes or until golden brown


Remove from the baking sheets


Cool on wire racks
