CHICKEN BROCCOLI CASSEROLE
3 or 4 boneless chicken breasts, cooked or baked - chopped
1 can cream of mushroom soup
1 cup mayonnaise OR 3/4 cup nonfat milk
1 box Stove Top stuffing
1 can mushrooms - drained, optional
1 - 20 ounce bag broccoli, thawed
1 pound Swiss OR Cheddar cheese, shredded
Preheat oven to 350 degrees.
Prepare chicken, or used leftover. Set aside.
Mix soup and mayonnaise in saucepan and heat until warm. Add mushrooms, if desired.
LAYER 1: Prepare stuffing. Spread in greased casserole dish.
LAYER 2: Broccoli
LAYER 3: Chicken
LAYER 4: Soup mixture
LAYER 5: Cheese
Cover and bake for 35 to 45 minutes.
Pairs Well With
This recipe is very flexible. You can use leftover chicken or turkey. Even a couple cans of drained chicken or tuna would work.
