CHOCOLATE THUMBPRINT COOKIES
½ c. butter flavor Crisco
½ c. sugar
1 T. milk
½ tp. vanilla
1 egg yolk
1 oz. unsweetened chocolate, melted and cooled
1 c. flour
¼ tsp. salt
1/3 c. semi-sweet minature chocolate chips
Peanut Butter Cream Filling
2 T. butter flavor Crisco
1/3 c. creamy peanut butter
1 c. powdered sugar
2 T. milk
½ tsp. vanilla
Heat oven to 350°. Grease baking sheet. Set aside.
Combine ½ c. butter flavor Crisco,
½ c. sugar, 1 T. milk, ½ tsp. vanilla and egg yolk. Beat at med. speed until well blended. Add melted chocolate. Mix well.
Combine flour and salt. Add to chocolate mixture. Mix until blended. Stir in chocolate chips. Form dough into 1" balls. Place 2" apart on baking sheet. Press thumb gently in center each cookie.
Bake @350° for 8 minutes. Repress centers after baking. Remove to wire rack to cool completely. Fill center with peanut butter cream filling.
Peanut Butter Cream Filling:
Combine 2 T. butter flavor Crisco and peanut butter in med. bowl. Stir with spoon until blended. Add 1 c. powdered sugar. Stir well. Add 2 T. milk and ½ tsp. vanilla. Stir until smooth. Fill cooled cookies.
