CHOCOLATE ZUCCHINI CAKE

Why I Love This Recipe
Ingredients You'll Need
1/2 cup butter or margarine
1 3/4 cups sugar
2 eggs
1/2 cup oil
1 tsp vanilla
1/2 cup sour milk (Add 1 tsp vinegar or lemon juice to 1/2 cup
milk and stir)
1 tsp baking soda
1 tsp baking powder
6 tbsp cocoa
1/2 tsp salt
2 1/2 cups flour
1 tsp cinnamon
2 cups shredded zucchini
1/2 cup chocolate chips
1/2 cup chopped walnuts
Directions
Cream butter and sugar until light and fluffy. (The butter should be just room temperature and the mixture should be very well creamed to insure a light textured cake)
Beat in eggs, oil, vanilla and milk.
In a separate bowl, combine baking soda, baking powder, cocoa, salt, cinnamon and flour.
Add to creamed mixture.
Stir in zucchini.
Spoon batter into a greased and floured 9X13 inch pan. (If you use cocoa instead of flour for this step, you will have a nicer look to the slices and it also adds flavor to the cake)
Sprinkle with chocolate chips and nuts.
Bake for 40 to 50 minutes or until a toothpick inserted into center comes out clean.
