COOKED EGGNOG

Eggnog has always been one of my children's favorite beverages. However, I started cooking the egg mixture as I heard more about e-coli.

INGREDIENTS

  • 6 eggs, beaten
  • 1/4 cup sugar
  • 1/4 teaspoon salt, optional
  • 1 quart milk, divided
  • 1 teaspoon vanilla
  • nutmeg OR cinnamon

DIRECTIONS

In saucepan, combine beaten eggs, sugar, and salt. Stir in 2 cups of milk. Cook over low heat stirring constantly, until it reaches 160 degrees. Remove from heat.


Add remaining 2 cups of milk and vanilla. Pour into pitcher or jar. Cover and refrigerate until thoroughly chilled, a few hours or overnight.
