CRAB CAKES (WITH SURIMI)
4 oz. Surimi (imitation crab meat) finely chopped
2/3 cup mashed potatoes
3 tbsp. finely chopped green onions
3 tbsp. finely chopped red pepper
2 tsp. lemon juice
2 tsp. dijon mustard
pinch of pepper
2 tbsp. dry bread crumbs
1 tsp. butter
1 tsp. oil
In a bowl, mix together crabmeat, potatoes, onions, red pepper, juice, mustard and pepper. Shape into 4 patties each about 1/2” thick. Spread bread crumbs on wax paper; press patties into crumbs, coating evenly.
In a nonstick skillet heat butter and oil over medium heat; cook patties for 3 to 4 minutes per side or until browned on outside and heated through.
Pairs Well With
Crab is expensive and I love crab cakes. This works well and won't break the bank. These can be made into the four patties or smaller for appetizers.
