CROCK POT BAKED BEANS

Ingredients

  • 1 lb. navy or great northern beans (2 1/3 cups)
  • 8 cups cold water
  • 1/2 tsp. salt
  • 1/4 lb. salt pork or bacon
  • 1 chopped large onion (1 cup)
  • 1/2 cup molasses
  • 1/3 cup packed brown sugar
  • 1 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

  • 1/8 tsp. pepper
  • Rinse beans.
  • In a large saucepan bring beans, water and salt to a boil; reduce heat.
  • Simmer, covered, 1 1/2 hours.
  • Pour beans and liquid into a bowl; cover.
  • Chill overnight.
  • Drain beans, reserving 1 cup liquid; place in an electric slow crockery cooker.
  • Add 1 cup reserved cooking liquid.
  • Stir in salt pork, onion, molasses, sugar, dry mustard, salt and pepper.
  • Cover; cook on low heat setting for 12 to 14 hours.
  • Stir before serving.
  • Makes 6 to 8 servings.

Notes

This is the simplest recipe I have for baked beans. It also gives you a choice of beans you can use.
