Backstory

Cahill Porter is a Irish cheese that is a cheddar that has been aged in Guinness beer. The result is a great tasting cheese that is marbled with a beatiful dark brown. This is a great soup to have with pumpernickle bread and a cold Guinness on St Patricks day.

Ingredients

  • 1 stick Butter

  • 4 1/2 cup Chicken Stock
  • 1 cup heavy cream
  • 1/2 lb Sharp Irish Cheddar
  • 1/2 lb Cahill Porter Cheddar

Directions

  • Melt butter in a heavy bottomed saucepan. Wisk in flour, cook until thickened; then wisk in 2 cups of chicken stock. Heat through. Add shredded cheeses, wisking constantly, followed by the remaining stock. When the cheese is melted, wisk in the cream and heat through.
