Why I Love This Recipe
I had a salad similar to this at a restaurant once and I loved it. It was such a tasty spin on the traditional Cesar Salad! I lived far away from this restaurant and I knew the only way I would be able to have it as often as I wanted it would be to make it myself. This recipe is the result of my experimenting until I got it right. It probably isn't the restaurant's exact recipe but it sure is good!
Ingredients You'll Need
4 Chicken Breasts
2 Bags of chopped Romaine Lettuce
1 Bag of Fresh Gourmet Garlic Butter Croutons
Marie's Creamy Cesar Salad Dressing
1 c Olive Oil
1 c coarsely chopped Red Onion
Shredded fresh Parmesean Cheese
Cajun Choice seasoning
Directions
Wash and dry the chicken breasts
Place in a dish and pour Olive Oil on top
Make sure chicken is covered with Olive Oil
If you need to add more you can
Sprinkle Cajun Choice seasoning generously over chicken
Cover and refrigerate
You can leave the chicken in the refrigerator from 15 minutes to several hours
Grill chicken on the barbecue on medium heat for 7 minutes
Flip chicken over
Sprinkle generously with the Cajun Choice seasoning
Cook chicken for another 7 minutes or until no longer pink
Remove chicken from grill
Slice into thin slices
Put lettuce into a large serving bowl
Add onions and chicken to lettuce
Add dressing to taste
Add Parmesean Cheese to taste
Serve immediately
