BackstoryThis is a recipe I got from my mother in law 10 years ago when I was dating my now husband. You may want to use low sodium soy sauce and use half the amount of red pepper. You can always add more of the red pepper if you like stuff spicy. For my kids I just pull some out in a bowl and then add the red pepper to the rest.
- 3 large chicken breasts, cut into 1 inch cubes
- 1 can stewed tomatoes
- 1/2 tsp red pepper flakes or 1/4 tsp cayenne pepper (you may want to reduce this by half)
- 1/4 c soy sauce
- 1 c water
- Brown chicken (do not add salt or pepper!!!) in about 2 Tbsp oil.
- When golden, add all other ingredients and allow to simmer with a lid for 30 minutes.
- Serve over rice.
