CAJUN MEATLOAF WITH SWEET PEPPER SAUCE

Ingredients

  • 1 cup sweet red peppers, finely chopped
  • ½ cup sweet green peppers, finely chopped
  • ½ cup onion, finely chopped
  • ½ tsp salt
  • 1 cup bread crumbs
  • 1 lb ground beef
  • ½ cup ketchup
  • 2 eggs
  • 1 tsp Cajun seasoning or 1 tsp hot pepper sauce
  • ---Sauce---
  • 1 tbsp oil
  • 1 cup sweet red peppers, diced
  • 1 cup sweet green peppers, diced
  • ½ cup onion, finely chopped
  • ¼ cup water
  • Salt to taste
  • ¼ cup cider vinegar
  • ¼ cup brown sugar
  • 1 tsp spicy mustard

Directions

  • Preheat oven to 325° F.
  • Combine meatloaf ingredients (1 to 9) into a bowl then pat into prepared loaf pan.
  • Bake at 325° F for 1 hour.
  • Sauce - Heat oil in large skillet over medium heat.
  • Add the red and green peppers, onion, water and salt.
  • Cook stirring occasionally, over medium heat until tender.
  • Stir in cider vinegar, brown sugar and spicy mustard.
  • Cook over medium-high heat until most of the liquid has evaporated and sauce thickens, about 8 minutes.
  • Top each serving with sauce and serve.
