CAJUN SHRIMP & POLENTA

Ingredients

  • 2 tsp · olive oil
  • ½ cup · chopped onion
  • 1 ¾ cup · yellow cornmeal
  • 1 clove · garlic minced
  • 1 tsp · chili powder
  • 1 tsp · paprika
  • 1 cup · chopped green bell pepper
  • ½ cup · frozen corn
  • ½ cup · black beans
  • 6 cup · boiling water
  • 3 tbsp · butter (unsalted)
  • 16 large · shrimp, cooked or 32 small shrimp, cooked
  • 1 hot sauce ( your choice) .

Directions

  • 1. whisk cornmeal gradually into boiling water cover over low.heat for fifteen minutes whisking often
  • 2. remove from.heat stir.in butter and set aside Add Picture
  • 3. heat oil in in skillet over medium.heat Add Picture
  • 4. saute onion garlic chili powder and paprika 2 minutes Add Picture
  • 5. add green pepper corn and black beans, cook.for 6 minutes.. Add Picture
  • 6. add shrimp and saute until warmed through Add Picture
  • 7. top with your favorite hot sauce ( i prefer Siracha) .. and serve over polenta

I love all kinds of spicy food and I love to explore different cuisines. This is a simple put together meal with a basic Cajun spice mix.
