CAJUN SHRIMP & POLENTA

Cajun Shrimp & Polenta

I love all kinds of spicy food and I love to explore different cuisines. This is a simple put together meal with a basic Cajun spice mix.

 


INGREDIENTS

  • Cooking Time: 20
  • Servings: 4
  • Preparation Time: 15
  • 2 tsp · olive oil
  • ½ cup · chopped onion
  • 1 ¾ cup · yellow cornmeal
  • 1 clove · garlic minced
  • 1 tsp · chili powder
  • 1 tsp · paprika
  • 1 cup · chopped green bell pepper
  • ½ cup · frozen corn
  • ½ cup · black beans
  • 6 cup · boiling water
  • 3 tbsp · butter (unsalted)
  • 16 large · shrimp, cooked or 32 small shrimp, cooked
  • 1 hot sauce ( your choice) .

DIRECTIONS

1. whisk cornmeal gradually into boiling water cover over low.heat for fifteen minutes whisking often



2. remove from.heat stir.in butter and set aside Add Picture



3. heat oil in in skillet over medium.heat Add Picture



4. saute onion garlic chili powder and paprika 2 minutes Add Picture



5. add green pepper corn and black beans, cook.for 6 minutes.. Add Picture



6. add shrimp and saute until warmed through Add Picture



7. top with your favorite hot sauce ( i prefer Siracha) .. and serve over polenta
