  • 6 oranges
  • Muffin Recipe:
  • 1/3 cup Crisco stick
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup pecan meal
  • 1 tsp grated orange peel
  • 1/2 cup orange juice
  • 1/4 cup milk
  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/4 tsp soda
  • 1/2 tsp salt


  • Cut oranges in half. Grate peel for recipe below. Cut orange in half and squeeze juice out. Hollow out orange halfs and save to pour batter in.
  • Cream shortening and sugar by hand; add egg and beat until light and creamy. Add meal, orange peel, orange juice (from oranges), and milk. Mix in flour and baking powder, soda and salt. Stir just until all ingredients are moist.
  • Fill the orange peel cups half full of batter. Wrap each one loosely with heavy duty aluminum foil. Place in hot coals, making sure that the batter side stays up. Cook 5 to 10 minutes until muffins are done.
