Canadian Bacon, Pepperoni, & Cheese Calzones

  • 1 package pizza dough
  • OR USE THIS RECIPE:
  • For Homemade Dough
  • 2 1/2 cups all-purpose flour
  • 1 package dry yeast
  • 1 teaspoon dried sage -- crushed
  • 1/2 teaspoon salt
  • 3/4 cup warm water -- 115 degrees
  • 2 tablespoons cooking oil
  • For the Fillings:
  • 1 1/2 cups shredded mozzarella cheese -- more if desired
  • 1/3 pound pepperoni sausage -- chopped in small pieces
  • 1/3 pound Canadian bacon -- chopped in small pieces
  • 1 small tomato -- peeled seeded chop
  • 1/3 cup Parmesan cheese
  • 1 each egg
  • 1 tablespoon water

DIRECTIONS

If making homemade dough: In large mixer bowl combine 1 cup flour, the yeast, sage, and salt. Add warm water and oil. Beat with an electric mixer on low speed for ½ minute. Beat on high speed for 3 minutes. Stir in as much of the remaining flour as you can. On a floured surface, knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6-8 minutes total). Place in a greased bowl; turn once. Cover, let rise in a warm place till


double (45-55 minutes).


FILLING: Meanwhile, make filling. In a bowl toss together the shredded mozzarella cheese, chopped pepperoni, chopped Canadian bacon, chopped tomato, and grated Parmesan cheese. Set the filling aside. Punch dough down; divide into 6 pieces. Cover, let dough rest 10 minutes.
