1 - 16oz. bag of whole shelled pecans
3/4 cup of brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
3-4 tablespoons frozen orange juice concentrate
Line a cookie sheet with foil. Spray with non-stick cooking spray. In medium mixing bowl combine pecans, brown sugar, salt and cinnamon and stir until evenly distributed with rubber spatula to prevent breaking many pecans. Add orange juice concentrate one tablespoon at a time stirring in an "around the outside of the bowl" fashion until sticky, and pecans are well coated. Spread in a single layer on cookie sheet and bake at 350 degrees. Remove from oven and stir after 10 minutes then continue to bake for approximately 15 more minutes or until nuts in corners of the pan begin to brown. Remove from oven and immediately dump onto waxed paper and spread to single layer with rubber spatula. Allow to cool completely before breaking apart. NOTE: When nuts in corners of pan begin to brown, pan should be removed promptly to prevent overcooked/burned pecans. This can happen very quickly once they begin to brown.
