CAPPUCCINO FLATS

Ingredients

  • 2oz unsweetened chocolate
  • 2 cups flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 1/2 cups chocolate chips
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tbls instant coffee crystals
  • 1 tsp water
  • 1 egg
  • 3 tbls shortening

Directions

  • Melt unsweetened chocolate - cool
  • Mix flour and cinnamon and salt
  • Beat shortening and butter, add sugars and beat unti fluffy
  • Add coffee to water to dissolve, then add coffee, egg and melted chocolate, beat well
  • Add flour mixture and mix well
  • Cover and chill 1 hour
  • Shape into two 7 inch rolls, wrap and chill at least 6 hours or overnight
  • Cut into 1/4 inch thick slices
  • Place on ungreased cooki sheet and bake at 350 for 10 to 12 minutes, cool
  • Heat chocolate chips and 3 tbls shortening until melted on low heat
  • Dip half of each cookie ino chocolate and place on waxed paper till chocolate is set
