CARAMEL PECAN BARS

Ingredients

  • Crust
  • 1 cup butter
  • 1/2 cup brown sugar
  • 3 cups flour
  • 1 egg
  • Filling
  • 3 cups pecan halves
  • 3/4 cup butter
  • 1/2 cup honey
  • 3/4 cup brown sugar
  • 1/4 cup whipping cream

Directions

  • Preheat oven to 350º
  • For crust, mix butter, brown sugar, flour and egg until blended. Press evenly into 10x15x3/4 jellyroll pan. Bake for 15 minutes.
  • For filling, sprinkle pecan halves evenly over crust. In a large heavy saucepan, melt butter and honey. Add brown suger. Stir and boil for 5 to 7 minutes, or until mixture reaches a rich caramel color. Remove from heat. Stir in whipping cream. Mix well. Pour over pecans. Bake for 15 minutes or until done. Cool. Makes about 4 dozen

Notes

I made these this weekend to put in the freezer for Christmas. They are truly sinful. I think I will drizzle some chocolate on them to serve.
