Caramelized Sweet Corn & Zucchini

Why I Love This Recipe

To know me is to know I can't wait for summer and the great zucchini and sweet corn supply! This dish is very tasty and creamy! I added a little more shredded parmesan cheese than the recipe called for, maybe a cup is what I added because we love cheese! This dish is perfect and quick and easy to make! Yummy!


Ingredients You'll Need

2 tablespoons butter
1 (1 pound) package frozen sweet corn
1 zucchini, diced
2 scallions, chopped
1/3 cup half and half
1/4 cup Parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper


Directions

Heat a large saute pan to medium high and add the butter. When it has melted, add the corn, zucchini, and scallions. Cook for 8 - 10 minutes or until the vegetables begin to brown. Add the half and half and continue to cook until the liquid reduces and thickens, about 4 - 5 minutes. Stir in the Parmesan cheese and season with the salt and pepper.
