1 box linguine
3-4 Tblsp. olive oil
3 cloves garlic, crushed
1/2 lb. bacon, chopped
1/4 c. white wine
2 eggs, beaten
1/2 c. grated fresh parmesan cheese
1/4 c. fresh parsley, chopped
dash of black pepper
Bring water to a boil to cook pasta.
Saute garlic in olive oil until lightly browned.
Remove and discard.
Add bacon and cook until crisp. Drain off almost
all of the grease. Add wine and simmer until reduced.
In a large bowl, add beaten eggs, cheese,
parsley and pepper.
When pasta is cooked, drain and quickly add
to egg mixture, tossing so that the hot pasta
cooks the eggs. Add bacon and toss again.
Top with additional grated parmesan cheese.
