Why I Love This Recipe

Cardamonand saffron are one of the world’s very ancient and expensive spices.

Cardamon is native to southeastern India and features in curries, rice dishes and is often included in Indian sweet dishes and drinks. It is used as a flavoring for Arab and Turkish coffee which is served with an elaborate ritual.

Because of the intense and sweet flavor of both these rich spices, these cookies have their own herbal and medicinal value. A lot of people in India love to eat these cookies with milk or their daily tea.


Ingredients You'll Need

1-3/4 cup all-purpose flour
1/4 cup semolina flour
2 tsp baking powder
1/2 tsp vanilla essence
1 cup unsalted butter (room temperature)
1 cup castor sugar
2 tsp brown sugar
pinch of nutmeg
4 tsps chopped cashews
2 tsp cardamon powder - optional
1/2 tsp saffron soak in 2 tbsp hot water - optional


Directions

Preheat oven to 375 deg. F


Seive flour and baking powder together.


Mix butter and sugar till creamy.


Add vanilla essence, saffron, nutmeg and cardamom. Mix well.


Add the flour mixture. Knead well and make into small balls.


Flatten and place on greased tray.


Dip a fingertip in water and dab on the centre of each ball of dough.


Now press a cashewnut half on top of each circle of dough.
