Caribbean Style Pinto Beans

Ingredients

1 pound pinto beans
12 cups water
2 vegetable bouillon cubes
1/2 teaspoon fresh oregano chopped
2 bay leaves
1 green bell pepper diced
1 carrot diced
2 celery stalks diced
1 large onion chopped
6 garlic cloves minced
dash of olive oil
salt to taste
cilantro for garnish


In a covered pot boil beans in water then lower heat and simmer for 1 hour.


Add bouillons, oregano, bay leaves, bell pepper, carrots and celery to pot.


In pan saute onions and garlic in oil and add to pot.


Uncover the pot and simmer for another 1 hour or until beans are tender.


Remove bay leaves


Add salt to taste.


Cilantro for garnish.
