Carrot & Coriander Soup!
1 lb of fresh carrots, chopped
1 medium onion, chopped
1 pint chicken stock
1 Tablespoon butter
Chopped bacon the more bacon the better!)
1 teaspoon of dried coriander
salt and pepper
Remove bacon and allow it to drain on a paper towel. Drain fat from pan.
Cook onion in the pan, don't burn it, just let it soften a bit.
Boil the carrots in water until soft then drain.
Add the cooked carrots to the broth and onion, boil together for 5 minutes.
Blend them altogether.
Add the dried coriander to taste (I use most of it!). Add the chopped cooked bacon.
Salt and pepper.
