CARROT AND ZUCCHINI BREAD

Ingredients

  • 1/2 cup butter
  • 3/4 cup browm sugar
  • rind from 1 large orange
  • 2 eggs
  • 1 1/2 cups selfraising flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoon orange juice
  • 2 tablespoon milk
  • 1/2 cup chopped walnuts
  • 1/2 cup shredded carrot
  • 1/2 shredded zucchini

Directions

  • Preheat oven to 350F. cream butter and sugar until light and fluffy. Beat in rind,Add eggs one at time. Stir in remaining indgredients. pour into a loaf pan and bake 45 mins. This bread is very nice toasted and eaten with cream cheese. It can also be used with a cream cheese frosting as a dessert

Notes

I sometime use cucumber in this recipe when I can not find zucchini.
