CARROT-BANANA BARS

Ingredients

  • Three large bananas, mashed smooth
  • 2 generous cups grated carrot
  • 2-1/4 cups flour (I used 1 cup white, 1-1/4 cup wholewheat)
  • 1/2 cup oil
  • 3/4 cup light brown sugar
  • 1/2 tsp crushed/powdered cardamom seeds
  • 1 TBS baking soda
  • 1/2 cup raisins
  • 1/4 tsp salt

Directions

  • Preheat 350F
  • Fit an 8" square cake pan w/parchment paper then grease
  • Combine flour, salt, cardamom, sugar and baking soda in large bowl
  • Mix in bananas and oil, just till moist
  • Fold in carrots and raisins
  • Bake 45mins or until tests done
  • Cool in pan for 10 mins
  • Cool on wire rack
  • Frost with cream cheese frosting if desired (yummy)
