Carrot Cake a la Gurry

Why I Love This Recipe

This is my favourite carrot cake. I got this from my old friend Gurry who is a master when it comes to cakes.


Ingredients You'll Need

Bundt:
3 cups grated Carrots (1/2 kg)
2 cups Flour
2 cups Sugar/Brown Sugar
1 cup Oil
4 eggs
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Cinnamon
1 Tsp Salt
Creme:
200g Cream Cheese
80g - 100g soft Butter
2 Tsp Vanilla essens
500g Icing Sugar


Directions

Cake: Combine sugar and eggs and whip, add the rest and bake in two bundt forms at 180 to 190°C for ca 50 to 60 min. Cool


Creme: Butter, Cream Cheese and Vanilla beaten together, sugar added and whipped again.


Tip: If you buy fresh carrots and grate them all, divide them in 1/2 kg bags and freeze then all you need to do when you want to bake the cake is just defrost the carrots and then you have your grated carrots in no time :)
