CARROT CAKE WITH CREAM CHEESE FROSTING

Ingredients

  • Cake:
  • 1/2 Cup all-purpose flour
  • 1/2 Cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 large egg white
  • 1/2 Cup sugar
  • 1/4 Cup brown sugar
  • 1/3 Cup vanilla yogurt
  • 1 Tablespoon canola oil
  • 1/2 teaspoon vanilla
  • 1-8 oz can crushed pineapple and juice
  • 1 Cup grated carrot
  • Frosting:
  • 8 oz (250 gram) cream cheese, softened
  • 3/4 Cup icing sugar
  • 1/4 Cup vanilla

Directions

  • 1. Preheat oven to 350F (175C), or 325F (160C) if using a dark pan
  • 2. Grease an 8x8 inch baking pan
  • 3. Combine flours, baking soda, cinnamon, and salt in a small bowl
  • 4. In a medium bowl, whisk together egg, egg white, sugars, yogurt, oil, and vanilla. Stir in pineapple and carrot
  • 5. Stir dry mixture into carrot mixture until just blended
  • 6. Pour batter into greased pan
  • 7. Bake for 45 minutes or until edges pull away from sides and are golden brown
  • 8. Let cake cool completely
  • 9. Combine frosting ingredients until smooth. Spread over cooled cake
