Why I Love This Recipe


Ingredients You'll Need

2 cups flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
Dash of nutmeg
1/2 tsp. salt
4 eggs @ room temp
3/4 cup oil
3/4 cup sugar
2/3 cup packed brown sugar
1/2 cup orange marmalade
1/2 cup orange juice
3 cups finely grated carrots
3/4 cup chopped walnuts
Orange Cream Cheese Frosting:
32 oz. cream cheese @ room temp
2 cups sifted 10x
1 1/4 cup orange marmalade
6 Tb. unsalted butter @ room temp
2 tsp. fresh orange zest



Directions

Grease 2 9" round pans; preheat oven to 350.


Sift together dry ingredients.


Beat together oil & sugars; beat in eggs; beat in marmalade & juice.


Add dry ingredients, mixing just until combined.


Stir in carrots, then nuts.


Bake apx. 40 minutes @ 350. Cool fully on rack before icing.


Frost with Orange Cream Cheese Frosting
