Carrot Layer Cake

3 Cups shredded carrots
3 Large eggs
2 Cups all- purpose flour
3/4 Cup vegetable oil
1/2 Cup buttermilk
1 1/2 Teaspoons baking powder
1 Teaspoon baking soda
1/2 Teaspoon salt
2 Teaspoons cinnamon
1/2 Teaspoon allspice
1/4 Teaspoon ground cloves
1 1/2 Cups sugar
1/4 cup walnuts for garnish

For icing:
8 Ounces cream cheese, at room temperature
3 Cups confectioners' sugar
5 Tablespoons margarine, room temperature
2/3 Cup packed dark brown sugar
1 Teaspoon vanilla extract

Preheat oven to 350ºF. Spray 2-8 inch round cake pans with nonstick spray. In a mixing bowl, blend all dry ingredients. In a second bowl mix all wet ingredients and blend well. Pour wet ingredients into dry and beat 5-6 minutes until smooth. Divide between 2 cake pans and bake 40-45 minutes. Remove and cool on wire racks. For the icing, using the electric mixer, whip cream cheese and margarine together. Add vanilla and brown sugar and continue whipping 2 1/2 minutes. Place first cake on a cake plate and spread with 1 cup of icing. Place second layer on top and use remaining icing on sides and top. Sprinkle walnuts on top.
