Carrot and Potato bake

Serves 12 | Prep Time | Cook Time 20 minutes

Ingredients

6 carrots, peeled and diced
3 potatoes, peeled and diced
1 Tablespoon milk
1 egg, lightly beaten
1 onion, finely chopped (optional but adds lots of flavour)
1/2 Cup breadcrumbs
1/2 Cup sharp/old cheddar cheese, grated
1/4 Cup parmesan cheese, grated


1. Steam or boil carrots and potatoes together until tender


2. Preheat oven to 350F (180C)


3. Mash the potatoes and carrots together


4. Add egg, milk, and onion


5. Spread mixture over bottom of 9x13 inch pan


6. Combine the cheese and breadcrumbs and sprinkle over the potato mixture


7. Bake for 20 minutes until the top is golden
