Ingredients You'll Need
1 1/4 cup cauliflower,cooked and chopped
1/4 cup celery, chopped
1 hard boiled egg, chopped
1 to tbsp light mayo
1 tsp mustard
1/8 tsp salt
1/8 tsp onion powder
pinch of pepper
pinch of paprika
Directions
Steam cauliflower until it reachers the same texture as cooked potatoes.
Rinse in cold water to cool and pat dry with a paper towel, chop the cauliflower into small bites.
Mix into a bowl with celery, eggs, mayo, mustard, onion powder, salt and pepper. Mix well. Sprinkle with paprika. (This is equal to 1/6 of a protein and 3/6 of a vegetable serving you would need in a day).
