Two summers ago I was looking to bake a cake for the sabbath but I was bored with my recipes. MY sister-in-law who happens to live next door was in Israel so I decided to look in her recipe box. There was a recipe for an amaretto cake. I tried it but the consistancy was off and the flavor not exactly right. So I experimented and I got this cake. It still has the amaretto but it has a couple of added ingredients that make this cake moist and delicious. Whenever I make this cake I rarely have leftovers. And if I do my neighbors come running and I have none.

  • 4 eggs
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 2/3 cup oil
  • 2 3/4 cup flour
  • 3/4 cup orange juice
  • 1/4 cup vodka
  • 1/4 cup amaretto(disorrono)
  • 1 3 1/4 oz. package of vanilla pudding
  • GLAZE:
  • 1 cup confectionary sugar
  • 1 tablespoon amaretto
  • 1 tablespoon orange juice
  • 1 teaspoon vodka
  • mix and drizzle icing a little @ a time.

  • Mix in the order of the ingredients. Place in a tube pan. Bake and let cool completely. Put on a cake plate and drizzle icing a little at a time, allowing each of the layers to dry in between. Oh you need to bake the cake in a tube pan, preferably with a removable cone or bottom.
