Cheddar Chutney Tea Sandwiches
1/2 cup of Major Grey's Chutney
1/2 pound of sharp Cheddar Cheese( preferably white)Coarsley grated( about 2 cups)
1/2 cup sour cream
3 oz soft cream cheese
12 very thin slices of homemade-type whole-wheat bread
1/2 cup minced fresh coriander leaves( can use less)
1/3 cup mayonnaise
Stir together the chutney, cheese, sour cream, cream cheese, salt and pepper to taste.
Make 6 sandwiches with the filling, pressing together gently.
With a 1-1/2" round cutter cut 4 rounds out from each sandwich.
Place the coriander on a small plate and spread the edges of the rounds with mayonnaise.
Roll the edges in the chopped coriander.
Wrap the sandwiches in plastic wrap and chill well.
Made be made 2 hours in advance
Makes about 24 tea sandwiches
