CHEESE ENCHILADAS

 

  • Cooking Time: 20 minutes
  • Servings: 4-6
  • Preparation Time: 20 minutes

Ingredients

  • 1 lb grated mexican cheese mix
  • 12 corn tortillas
  • can canola spray
  • Enchilada sauce

Directions

  • Spray tortillas lightly with spray
  • Heat on meduim heat until soft
  • Put some sauce in baking pan
  • dip tortillas in sauce
  • Put a handfull of cheese in middle of tortilla
  • Tuck side into middle and roll
  • Line them up in the pan
  • Pour sauce over enchilads until it runs down the sides of the pan
  • Sprinkle with some more cheese
  • Bake at 400 degrees for 20 minutes
