Cheese Encrusted Chicken
3 tablespoons unsalted butter
3 tablespoons flour
3 cups chicken broth
1 shallot, minced
1 teaspoon salt
½ teaspoon ground pepper
1 tablespoon fresh lemon juice
½ cup sour cream
2 cups Parmesan cheese, grated
3 cups frozen broccoli florets, thawed or fresh
1 ½ pounds boneless, skinless chicken breast - cooked and shredded
1 cup cracker crumbs (Ritz®, or your favorite)
Place cheese, breadcrumbs, and water in food processor and blend lightly.
Pour flour onto plate.
Whisk egg in shallow bowl.
Liberally season chicken with salt and
pepper. Dredge chicken in flour and egg mixture. Coat on all sides with breadcrumbs.
Heat oil over medium-high heat. Sauté chicken for 2 to 3 minutes or until golden brown.
