Cheese Soup

1 Cup = 1 Point

 


INGREDIENTS

  • 3 cans Fat Free Chicken Broth (low sodium)
  • 2 bags frozen veggies (any type,
  • broccoli, cauliflower, carrots,
  • etc.)
  • 1 Can Mild Rotel
  • 10 oz block velveta light cheese

DIRECTIONS

Put broth, rotel and veggies in pot, bring to boil, then simmer until cooked well (approx. 45 min)


Cube up cheese into 1" cubes (or smaller) and drop in soup, continually stir until melted.

I was really excited for this recipe. I put it through the Weight Watchers Recipe Builder to make sure of the points value and it came out to be 3 points instead of one. I still made it and it was a great recipe!!
