CHEESE SOUP

Ingredients

  • 3 cans Fat Free Chicken Broth (low sodium)
  • 2 bags frozen veggies (any type,
  • broccoli, cauliflower, carrots,
  • etc.)
  • 1 Can Mild Rotel
  • 10 oz block velveta light cheese

Directions

  • Put broth, rotel and veggies in pot, bring to boil, then simmer until cooked well (approx. 45 min)
  • Cube up cheese into 1" cubes (or smaller) and drop in soup, continually stir until melted.
