Cheese-Stuffed Baked Potatoes
4 lrg. baking potatoes
1/4 c. soft butter
1 c. chive creamed cottage cheese*
2 Tb. mayonnaise
salt and pepper to taste
1/2 c. grated American cheese
Scrub, then bake potatoes in hot oven, 400º for 1 hour.
When done, cut a thin lengthwise slice from top of each. Scoop out insides into mixing bowl. Mash well with fork and blend in butter, cottage cheese, mayonnaise, salt and pepper. Blend thoroughly.
Pile lightly into potato shells, leaving top surface rough. Sprinkle wtih grated cheese, the paprika.
Bake in very hot oven, 450º 10-12 min. or 'til cheese melts and potatoes are heated through.

Today we call these Twice Baked Potatoes!! But the farmer's wives who really, I think, created this wonderful side dish called it........
