CHEESE STUFFED ZUCCHINI

Ingredients

  • 6 medium zucchini
  • 3/4 cup crumbled feta cheese
  • 3/4 cup drained ricotta
  • 1 beaten egg
  • 1 tsp garlic powder
  • Salt
  • 1 tsp dill weed
  • Pepper
  • Butter
  • Paprika

Directions

  • Scrub zucchini and cut off ends
  • Cook covered in boiling water for 5 minutes
  • Dry and cut in half, scoop out seeds
  • Combine feta, ricotta, egg, garlic powder and dill weed
  • Add salt and pepper to taste
  • Mix well
  • Put zucchini in bottom of buttered casserole dish
  • Place 2 tsp cheese mixture in each zucchini half
  • Drizzle with melted butter and sprinkle with paprika
  • Bake at 350 for 20 to 30 minutes, or until cheese is bubbly
  • Can be made ahead and refrigerated.
