Cheese Stuffed Zucchini

Ingredients

6 medium zucchini
3/4 cup crumbled feta cheese
3/4 cup drained ricotta
1 beaten egg
1 tsp garlic powder
Salt
1 tsp dill weed
Pepper
Butter
Paprika


Scrub zucchini and cut off ends


Cook covered in boiling water for 5 minutes


Dry and cut in half, scoop out seeds


Combine feta, ricotta, egg, garlic powder and dill weed


Add salt and pepper to taste


Mix well


Put zucchini in bottom of buttered casserole dish


Place 2 tsp cheese mixture in each zucchini half


Drizzle with melted butter and sprinkle with paprika


Bake at 350 for 20 to 30 minutes, or until cheese is bubbly


Can be made ahead and refrigerated.
