Cheese and Corn Chowder

Ingredients

3 medium potatoes, peeled (I don't always peel them) and coarsely chopped
1 cup water
2 tsp. instant chicken granules or boullion
1/8 tsp ground red pepper
dash black pepper
a little salt (optional)
3 cups milk
1 10-oz package of frozen corn
2 Tblsp. flour
2 cups grated cheddar cheese


In a large saucepan combine potatoes, water, bullion, red pepper, salt, and pepper.


Bring to a boil, reduce heat, cover and simmer about 10 minutes or until potatoes are tender, stirring occasionally.


Stir in 2 1/2 cups of milk and corn


In a small bowl, stir together remaining milk and flour. Stir into potato mixture. Cook and stir over medium heat until slightly thick and bubbly.


Cook and stir for 1 minute more. Add cheese and stir until melted.


Sprinkle in a little parsley at the end.
