Cheese and Onion Muffins

Serves 12 | Prep Time 10 minutes | Cook Time 25 minutes

Ingredients

1 egg
1 cup milk
1/4 cup vegetable oil
1 medium onion, chopped
1 Tbsp butter
1 cup grated Cheddar cheese

2 cups flour
1/4 cup sugar
1 Tbsp baking powder
1 tsp salt
1 tsp salt


Preheat oven to 400 degrees.


Grease bottoms only of 12 muffin cups (or use paper liners).


Saute the onion in butter in a small frying pan. Set aside.


Beat egg; sir in egg and oil.


Add sauted onion and grated cheese.


Mix in remaining ingredients just until flour is moistened (batter will be lumpy).


Fill muffin cups 2/3 full.


Bake 20 to 25 minutes or until golden brown.


Remove from oven and immediately remove muffins from pan.

These savory muffins go well with chili or a hot dish, but are also a nice addition to a brunch.
