Why I Love This Recipe
Breakfast for dinner is always a good thing! It's hard to get a good breakfast like this on the table for breakfast thru the week with everybody rushing out of the door! We love bacon and who doesn't but I'm guessing cooked sausage would be just as good in these little biscuit cups! These would also be good without the gravy if you don't like making gravy and I can tell you this by my experiment! I ate one with gravy and one without! :) We loved our breakfast for dinner!
Ingredients You'll Need
2 large eggs
1 tablespoon milk
salt & pepper to taste
1 can refrigerated biscuits, 10 count
12 ounces bacon, cooked & crumbled, saving the bacon grease
1/3 cup shredded cheddar cheese
For the gravy
bacon grease left in skillet
3 tablespoons flour
2 cups milk
salt & pepper to taste
Directions
Preheat oven to 350 degrees.
Place eggs into mixing bowl and add milk, salt and pepper. Mix well.
Press each biscuit round into 10 regular size muffin cups that have been sprayed with cooking spray. Bake for 6 minutes, remove from oven and with the end of a wooden spoon press center and sides of dough to make room for egg mixture. Place about 2 tablespoons of egg mixture into each partially baked biscuit. Top with crumbled bacon and shredded cheese. Gently press all of mixture inside biscuit.
Bake for 12 to 15 minutes or until eggs are set.

For the gravy, get the bacon grease hot and then add flour. Whisk, making a roux. Add milk, stirring well and cook until gravy thickens up the way you like it.
Plate muffins, topping with gravy.
