  • 1 medium head cauliflower, broken into flowerets
  • 1/4 cup margarine
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 3 cups chicken broth
  • 2 cups milk
  • 1 teaspoon Worcestershire sauce
  • 1 cup sharp shredded American cheese
  • minced chives, optional


  • In large saucepan,cook cauliflower in a small amout of boiling salted water 10-15 minutes or until tender;
  • drain. In a large saucepan, melt margarine over medium heat. Add onion and saute until tender. Blend in flour to make a smooth paste. Gradually add broth, stirring constantly. Add milk and Worcestershire sauce. Cook until slightly thickened, stirring often. Add cauliflower, bring to boiling. Reduce heat, stir in cheese and cook over low heat until cheese melts, stirring cnstantly. Spoon into serving bowls. Sprinkle with chives.
