2 Tbsp butter
1 can green chilies, diced
2 onions, diced
4 lbs diced frozen hash browns (2 large bags)
Salt & pepper
2 cups grated sharp Cheddar cheese
2 cups Monterey Jack cheese
8 slices of bacon
Directions
Preheat oven to 375. Melt butter in a large skillet and sauté the chilies and onions until brown. Add the frozen hash browns, salt & pepper and toss together. Pour into a buttered baking dish and top with cheese and bacon. Bake until hot and bubbly. About 30 minutes.
