Cheesy Spinach En Croute, Vegetarian
2 tablespoons butter
2 ounces feta cheese, grated or crumbled
2 ounces grated parmesan cheese
4 ounces cream cheese, softened to a warm temperature
1 12-oz. package frozen chopped spinach, drained
1/4 teaspoon fennel seeds
1/4 teapoon hickory smoke liquid seasoning
3 tablespoons toasted pine nuts
1/4 cup very thinly sliced red onion
1 8-ounce package of 8 uncooked crescent roll dough
Melt one tablespoon of butter in a 9" square baking dish.
Spread half of the rolls out flat in a sheet on the dish, without separating them at the perforations.
Mix the cheeses, egg, spinach, nuts, onion, and spinach until smooth and completely blended.
Spread the spinach mixture over the rolls, covering evenly.
Cover all with the remaining sheet of four roll dough.
Brush with the remaining tablespoon of butter.
Cook at 325 for 25 minutes.
Pairs Well With
My husband says this could be addictive and that's high praise from him. He instructed me to write down the recipe immediately. The crust is similar in texture to a croissant. It's a bit rich but given it's a main course with no meat I figure you can splurge with the butter and cheese.
