Why I Love This Recipe
I was inspired by a recipe on Pinch of Yum to create this cheesy cauliflower sauce recipe which brings pizzazz to veggies and meats for someone on a very restrictive diet. I am on an autoimmune protocol elimination diet and this sauce brightens up my day as I look forward to a meal that is topped off with this yummy sauce. Anyone can enjoy this (use veggie broth instead of bone broth if you don't eat meat).
Ingredients You'll Need
!Cauliflower:
3-4 pounds cauliflower broken into florets
water to cover
!Sauteed veggies:
2-3 tablespoons coconut oil
1 cup chopped onion
6-8 large cloves garlic, minced
!Blender:
1 cup bone broth
1/2 cup coconut milk
1/2 cup nutritional yeast
2 teaspoons salt (or to taste)
Directions
!Cauliflower:
In a large pot cover the cauliflower florets with water, bring to a boil then simmer until tender (7-10 minutes).
Drain
!Saute:
In a skillet over medium heat melt the coconut oil.
Add onions and saute until translucent.
Reduce the heat to low and add then minced garlic.
Gently stir onion/garlic mixture until the garlic is lightly cooked, making sure not to let the garlic brown.
Remove from the heat.
!Blender:
Put all the ingredients in a high speed blender and blend on high until smooth and creamy.
Freeze in one serving size portions.
