CHEEZY BACON GRIT MUFFINS

Ingredients

  • * 1/2 lb. bacon, fried and crumbled
  • * 2 pkg. (individual size) instant grits
  • * 1/2 cup milk
  • * 1 egg
  • * 1/2 cup shredded cheese
  • * 1 cup self rising flour

Directions

  • 1. Make grits according to directions on package
  • 2. Add milk, egg, cheese and flour
  • 3. Combine until moistened
  • 4. Fold in bacon
  • 5. Line muffin 12 muffin tins with paper liners.
  • 6. Spray with non-stick spray
  • 7. Divide mix equally into muffin tins
  • 8. Bake 20 minutes in a 400 degree oven

Notes

This was a recipe that came to me while making breakfast for dinner one night. I cooked extra bacon and just started experimenting. The texture is smooth but also has a touch of a grain texture. They can be made with sausage or ham. Country ham would work but you might want to cut the amount down due to the salt. These muffins will put you southerners right into "Grit Heaven."
