Chef's Chocolate Sauce for Garnish
2 cups water
10 oz sugar
1/2 cup light corn syrup
4 oz unsweetened cocoa powder
1 pound dark chocolate, melted

This sauce is thick when cool and thinner when hot. You can add water to thin out the cool sauce if necessary.
