Chef Chesnut's SWEET POTATO RAISIN SAUTE

Another sweet dish or side dish which would add to any holiday or dinner table, a little sweet and "comforting" without sodium, salt or cholesterol.

 


INGREDIENTS

  • Cooking Time: 15
  • Servings: 2
  • Preparation Time: 10
  • one sweet potato, shaved
  • handful of raisins
  • 2 tablespoons extra virgin olive oil
  • ground cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon smart balance spread

DIRECTIONS

Peel the sweet potato or yam, then shave it with the peeler into strips, saute the sweet potato in the olive oil in a skillet on medium heat until a little brown, while you saute add cinnamon, brown sugar and raisins to taste, add smart balance after you remove the mixture from the pan and melt on top to give it a more "rich" flavor.


Not only is this dish healthy, it promotes a calming feeling, for root vegetables have this effect. Also high in Omega3's and approx. 400 calories for the entire dish! Bon a petit!
